DAILY ACTIVITY (ENGLISH VERSION) MID PRAKTEK

Hey guys

Back again on my blog this time and today I will tell you about my activities in the kitchen during mid practice for two days, Sunday and Monday.

Sunday, 07 sep 2019, we only prepared all the menus that we had previously made, namely croissants, tarlets, sour bread, filling for croissants and tarlets as well as garnishes. And I only made tarlets, garnis and cheese cream filling and dulche de leche. Dulche de leche is a sauce made from SKM which is cooked for several hours until it becomes caramel and then mixed with whip cream. And then I made cream cheese and also made garnishes.

Monday, September 8, 2019, on this day we only filled all types of tarlets and also croissants with fillings that we made yesterday which are 7 types of croisan: almond croissants, lemon almond croissants, chocolate rocher croissants, cream cheese croissants, croissants with dulcey cream and cruffin. For the tartlet we made 4 types of tartlet: Dulche de leche, mango compote, bavaroise, and cheese custard. For salty snacks, we have 1 healthy sandwich item made from sourdough bread. After everything was ready, we set up all cakes in the rector to be assessed by lecturers as our mid practice 
 scores.

 






 

After that we returned to the kitchen and clean the work area and then went home ...
