DAILY AVTIVITY

Assalamualaikum wr wb,
Hallo guys,


Today is the first day we practice in second week in second semester, this week we will make continental breakfast and indonesian breakfast, i am going to campus at 06.30 because we were told to arrive early by supervisor or our senior because we will prepare breakfast menu for breakfast in tuesday, i'm not coming late because i'm live in dormitory, so i'm not afraid of coming late, and i will explain what i do in kitchen today and how to make our produk from prepare untill our produk is done.

After arrive in kitchen i join with my friend, and we wait for supervisor to come, and after they are come we are one line in front of the kitchen for take a pray and after that our supervisor do absent to us one by one for check our grooming and to enter into the kitchen, in kitchen we put our bag in loker and we put our tool, and supervisor give to us some direction, and after that Chef Aldino taking over for give us direction on what we will do for today, and chef aldino write some menu of continental breakfast like soft roll, hard roll, croissant, danish, twist bread and egg dishes, after that chef aldino choose group to do some menu which has beeb written, and my group make twist bread, after that chef aldino give our instruction for prepare ingridients for make bread.

I will explain a little how to make twist bread as i learned,
First prepare all ingridients like hardflour, yeast, salt,non fat milk powder, shortening, margarin or butter, and water, like in this pictures.

and after that mix that ingridients using straight do method, straight do method is the methode by which all dry ingridients expect salt, because salt is add at the end, after that add shortening and butter or margarin and water and mix until that dough kalis, after that dough kalis proofing that dough more or less 1½ hours, and after that portion that dough weigh 60 gr and rolling that dough form like this pictures,
 
after that do like that pictures sliced into 3 parts and spun that dough, after that proofing again that dough in sit pan more or less 10 minutes, after that rub using egg wash and baking in oven more or less 30 minutes in 200 degrees celsius.



After we are finish make a bread we are one line again for listened instruction from Chef Aldino about our produk today, and after we are listened instruction we are take a rest, and after that we are GC or general cleaning for cleaning kitchen before we go home, and after GC we are one line for lisened instruction by Chef ical,and after that we take a pray and after that we go home.
